Sodium stearyl lactate(SSL):has the functions of strengthening, emulsifying, anti-aging, fresh-keeping, etc., and is used in bread, Mantou, instant noodles, noodles, dumplings and other flour products:
1. Enhance the elasticity, toughness and gas retention of dough, increase the volume of bread and Mantou, and improve the organizational structure.
2. Make the surface of noodles and instant noodles smoother, with a low breakage rate, resistant to soaking and cooking, and more chewy.
3. Make cookies easy to demold, have a neat appearance, clear layers, and a crispy taste.
4. It can interact with amylose to delay and prevent food aging, and extend the shelf life.
5. Improve the quality of frozen food, improve organizational structure, avoid surface cracking, and prevent filling leakage.
